Beluga Lentils & Beetroot SaladCourse: Breakfast & Smoothies
300g beluga lentils
2 beetroots (cooked, pre-packaged)
100g feta cheese
½ red onion
Two handfuls mixed greens
- Salad Dressing
3 tbsp olive oil
1 tbsp apple cider vinegar
2 garlic clove crushed
½ squeezed lemon juice
- Cooked pre-washed beluga lentils for 20-30 min until soft. You can also used drained and washed tinned lentils.
- Chop the feta, the beetroots, the radishes and the onions.
- Mixed all the ingredients together with leafy greens and the salad dressing.
