Black Beans & Dill Pesto Salad

- For Salad
1 x 400ml can of black beans
½ red onion
10-12 cherry tomatoes
1 small bunch of fresh dill
- For Pesto
50ml extra virgin olive oil
1 handful of pine nuts
2 handfuls spinach
1 handful fresh dill
½ squeezed lemon juice
1 garlic clove
Salt
Method
- Drain and wash the black beans.
- Chop the onion, the tomatoes and the dill.
- For pesto: place all ingredients in a blender and blitz until smooth.
- Mix the beans with the vegetables, add pesto as a dressing and top up with fresh dill.
