Spinach Scrambled Eggs on Toast

  • 4 eggs

  • 1 large handful of spinach

  • 6 sun-dried tomatoes

  • 2tbsp olive oil (for frying)

  • Toasted bread

  • 1 avocado (optional)

  • 1tsp dried parsley

  • Salt

  • Pepper


  • Whisk 4 eggs with the dried parsley, the salt and the pepper.
  • Pour the eggs in a hot frying pan with some olive oil, add the spinach and cook for 2-3 min over a medium heat, stirring continuously.
  • Toast the bread, slice the avocado and the dried tomatoes.
  • Combine the scrambled eggs with sun dried tomatoes and place on the toast.
